شناسایی نوآوری‌ های کسب‌ وکار فرآوری زعفران

چکیده
پایه و اساس توسعه اقتصادی و مسیر لازم برای پیشرفت کسب‌ وکارها، نوآوری می‌باشد. این مفهوم شامل تولید ایده‌های نوینی است که می‌توانند برای حل مسائل جدید و اساسی به کار گرفته شوند. در واقع نوآوری منجر به افزایش بهره‌وری و سودآوری، دسترسی به بازارهای جدید و بهبود بخشیدن بازارهای موجود شده است. از اﯾﻦرو، کسب و کارها برای ﻣﻮﻓﻘﯿﺖ ﻋﻤﻠﮑﺮد ﺧﻮد باید ﺑﻪ ﺷﮑﻞﻫﺎی ﻣﺨﺘﻠﻒ ﻧﻮآوری روی آورﻧﺪ، بنابراین با توجه به لـزوم افزایش عملکرد صنعت زعفران، یکی از راهکارهای اساسی، شناسایی نوآوری‌های موجود این صنعت است. در این راستا، در این مطالعه به شناسایی نوآوری‌های صنایع فرآوری زعفران استان خراسان رضوی پرداخته شده است. این پژوهش از نظر هدف، کاربردی و از نظر ماهیت و روش، توصیفی- پیمایشی و بر پایه رویکرد پژوهش‌های آمیخته (کیفی و کمی) انجام شده است. جامعه مورد مطالعه پژوهش را خبرگان صنعت زعفران در سال ۱۴۰۳ تشکیل داده‌اند که با روش نمونه‌گیری گلوله‌برفی انتخاب شدند. برای تحلیل داده‌ها و اجرای روش دلفی فازی از نرم‌افزارهای SPSS و Excel استفاده شد. نتایج روش دلفی فازی پنج ضلعی نشان داد که 16 نوآوری از 25 نوآوری شناسایی شده جزء نوآوری‌های صنایع فرآوری زعفران بودند. همچنین، نتایج نشان داد که توسعه محصول جدید فرآوری شده زعفران، تغییرات اساسی در فناوری در سطح کلان و ملی، بهبود محصول فعلی زعفران و شیوه‌های جدید در روش تولید جزء مهم‌ترین نوآوری‌های شناسایی شده بودند. با توجه به یافته‌های این پژوهش، پیشنهاد می‌شود که صنایع فرآوری زعفران به توسعه محصولات فرآوری‌شده جدید مانند نوشیدنی‌ها و دمنوش‌های زعفران توجه کنند تا ضمن ایجاد ارزش افزوده، سهم بازارهای جهانی خود را افزایش دهند. همچنین، همکاری بین دولت و بخش خصوصی برای تسهیل دسترسی به فناوری‌های روز و به‌کارگیری سیستم‌های اتوماسیون پیشرفته در فرآیندهای تولید، به بهبود کیفیت و کاهش هزینه‌ها کمک خواهد کرد. در نهایت، استفاده از روش‌های نوین در تولید و برندسازی دیجیتال می‌تواند به تقویت رقابت‌پذیری و افزایش صادرات این محصول کمک کند.

Identifying Business Innovations in the Saffron Processing Industry

چکیده English

Innovation is the cornerstone of economic development and the essential pathway for business advancement. This concept encompasses the generation of novel ideas that can be applied to address new and fundamental challenges. In fact, innovation has led to increased productivity and profitability, access to new markets and improvement of existing markets. Therefore, for the success of their operations, businesses must turn to different forms of innovation, therefore, considering the need to increase the performance of the saffron industry, one of the basic solutions is to identify the existing innovations of this industry. In this regard, this study has identified innovations in the saffron processing industries of Khorasan Razavi Province. This research is applied in terms of purpose and descriptive-survey in terms of nature and method, and is based on a mixed research approach (qualitative and quantitative). The study population consisted of saffron industry experts in 2024, who were selected using the snowball sampling method. Data analysis and the application of the Fuzzy Delphi method were carried out using SPSS and Excel software. The results of the Pentagonal Fuzzy Delphi method showed that 16 of the 25 identified innovations were innovations in the saffron processing industry. Also, the results showed that the development of a new processed saffron product, fundamental changes in technology at the macro and national level, improvement of the current saffron product and new methods in the production method were among the most important innovations identified. According to the findings of this research, it is suggested that saffron processing industries pay attention to the development of new processed products such as saffron beverages and teas to increase their global market share while creating added value. Also, cooperation between the government and the private sector to facilitate access to modern technologies and the use of advanced automation systems in production processes will help improve quality and reduce costs. Ultimately, using innovative methods in digital production and branding can help strengthen competitiveness and increase exports of this product.
